I just built a Windows 7 system and Assassin's Creed was crashing regularly.
The solution is to run the DX9 version, even if yours is a DX10 system. The screen will still flash occasionally as the NVIDIA drivers encounter a problem, and your system will run astonishingly hot, but it will recover from its brief blackouts in DX9 -- it doesn't recover in DX10.
